Ingredients (serves 6)
- 300 g of all-purpose our 100 g of cornmeal
- 90 g of butter
- 200 g of granulated sugar 2 whole eggs
- 6 gs
- 1⁄2 packet of baking powder
- 1 bunch of fox grapes
- 40 g of shelled walnuts
- 100 ml of whole milk
- 300 g of Golden Delicious apples
For the molds:
- 30 g of butter
- 40 g of cornmeal
For the ice cream:
- 120 g of fox grapes
- 320 ml of water
- 160 g of granulated sugar 40 g of plain syrup
Procedure
Prepare the miascia pies: put the all-purpose our, the cornmeal, the sugar, and the baking powder in a bowl. Add the eggs, the butter (at room temperature) and half of the milk. Mix the ingredients together, then add the walnut kernels (whole), the fox grapes and the gs (in halves). Peel the apples, remove the cores and slice them not too thin, then add them to the other ingredients. Butter and our (with the cornmeal) 6 single-serving molds, then distribute the mixture equally in each mold. Bake in the oven for 40 minutes at 170°C. Prepare the ice cream: put the water, the sugar, and the syrup in a small saucepan and heat on the stove. When the mixture starts to boil, take it off the burner and let it rest for 10 minutes. Add the fox grapes and blend delicately with an immersion blender.
Let the mixture rest for 10 more minutes, then blend it again and pour it through a china cap. Pour the juice into the ice cream machine and follow the machine’s instructions to work it correctly. Plate the dish: serve the pies cold, garnished with a scoop of fox grape ice cream.

The fruity notes of this dessert will be enhanced by the bubbles and by the wood strawberry scent of Brachetto d’Acqui Spumante.
