{"id":1479,"date":"2019-01-24T10:49:38","date_gmt":"2019-01-24T09:49:38","guid":{"rendered":"https:\/\/ristorante-saliceblu-bellagio.it\/ravioli-alla-mozzarella-di-bufala-e-salsa-di-pesto\/"},"modified":"2024-03-19T12:26:15","modified_gmt":"2024-03-19T11:26:15","slug":"ravioli-with-buffalo-mozzarella-and-pesto","status":"publish","type":"post","link":"https:\/\/ristorante-saliceblu-bellagio.it\/en\/ravioli-with-buffalo-mozzarella-and-pesto\/","title":{"rendered":"Ravioli with buffalo mozzarella and pesto"},"content":{"rendered":"<p><strong>Ingredients (serves 4)<\/strong><\/p>\n<ul>\n<li>200 g of colored pasta<\/li>\n<\/ul>\n<p><em>For the filling and the dressing:<\/em><\/p>\n<ul>\n<li>50 ml of extra virgin olive oil 50 g of fresh basil<\/li>\n<li>5 g of pine nuts<\/li>\n<li>10 buffalo mozzarella cherries each weighing 50 g<\/li>\n<li>butter<\/li>\n<\/ul>\n<h2>Procedure<\/h2>\n<p>Prepare the pesto: put the washed and trimmed basil leaves, the olive oil, the pine nuts, and a large pinch of salt in a blender and blend the ingredients until you get a smooth and even sauce.<\/p>\n<p>Prepare the ravioli: place the colored pasta on a lightly oured pastry board, then use a small knife or a pasta cutter to cut out some 8\u00d78 cm squares. Put a mozzarella and a spoonful of pesto in the middle of each, dampen the edges of the pasta, fold the square diagonally<br \/>\nso that you get a triangle and press along the edges to seal it well. Once you\u2019ve made a triangle, join the two opposite corners, making them stick together and leaving a round space in the center to help the cooking process. Cook the ravioli in plenty of salted boiling water for about 5 minutes, making sure the water doesn\u2019t boil too hard. When the ravioli are ready, drain them, dress them with the melted butter. Serve nice and hot.<\/p>\n<h2>Wine<\/h2>\n<p>This dish, with its characteristic Mediterranean scent, requires a wine just as fragrant, one that is medium-bodied and that possesses good acidity.
